Why doesn't mercedes use 6 speed autos on their 6 cylinders instead of 5 speeds?

Because they already have a 7 speed which they are going to introduce very shortly.

well I ask because they're not gonna use the 7G on 6 and 4 cylinder engines, only on the 8 cylinder engines. Why do the rest get stuck with puny 5 speeds?

7G is expensive, and heavy, and generally only built for high toruqe applications. It's also big. That and their 5spd is really very good.
